Jamaican Bun & cheese is a must at easter#1, eaten with thick cheddar cheese. This is a rich bun with lots of flavour make sure you give this recipe a try.

Easter Bun

  • 500g Plain flour
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • 1 tsp Mixed spice
  • 1 tsp salt
  • 2 tbsp. Baking powder
  • 50g Butter (add more if you want it more fluffy)
  • 1 bottle of Stout (dragon or Guinness)
  • 1 cup of red wine
  • 1 tbsp. vanilla
  • 1 cup brown sugar
  • 1 beaten egg
  • 250g mixed fruits
  • 100g cherries
  • 1 tbsp. guava jam/ strawberry jam
  1. Firstly mix all your dry ingredients into a bowl, Plain flour, 1 tsp Cinnamon, 1 tsp Nutmeg, 1 tsp Mixed spice , 1 tsp salt, 2 tbsp. Baking powder and set aside.
  2. Then Use a pot on high heat and melt 500g of butter until it dissolves. Then add 2 cups of stout, 1 cup of red wine, vanilla, sugar and mix together to everything dissolves then turn the fire off and let mixture cool down.
  3. Pour liquid mixture into a separate bowl and let it cool down for 10 minutes
  4. Then add 1 beaten eggs. .
  5. Then Add ½ of your dry ingredients to the liquid mixture and fold together
  6. Add half of the mixed fruits and cherries to the liquid mixture and fold together
  7. Then add the rest of the flour mixture and fold together
  8. Lastly add the remainder of the fruits into the mixture and fold together.
  9. Add 1 tbsp. of guava jelly, 1tsp browning and mix together until you get a sloppy consistency
  10. Grease your baking tray with butter or vegetable oil
  11. Then slowly pour your mixture into the tray. And add remaining mixed fruits on top.
  12. Add into a pre-heated oven at 160 degrees for 1 hour in middle rack.
  13. Then cook down for 30mins
  14. Glaze with honey.
