Jamaican Christmas Black Cake Rum cake / Fruit Cake. This recipe is a ever present during the holiday season in a Jamaican household! This sweet and rum infused cake is what makes Christmas so special. The integral part of this recipe is the soaking of the dried fruit in white rum and red label wine, some people soak for months in one full year! The longer you soak the richer the taste! Another tip is to wrap cling around the cake after it’s finished and rest overnight in room temperature. This allows all the flavours to marinate together.

People from all over the Caribbean Islands have their own twist (and a lot of names!) for Christmas fruit/rum/black cake! This recipe is our interpretation on the Jamaican version.
