Christmas Honey Jerk Turkey is a great dish to have on the dinner table at christmas. This Turkey is filled with so succulent flavours that whill have you wanting more. Our Homeade Jerk marinade gives gives this tukey the extra kick.

Honey Jerk Turkey (Oven Based)

  • 1 Large Turkey
  • 1 tbsp. All Purpose seasoning
  • 1 tbsp. Jerk Seasoning
  • 1tbsp. Black pepper
  • 4 Branches of Fresh Thyme
  • 3 Branches Spring onion/ Scallions
  • 2 scotch bonnet peppers
  • 1 chopped onion
  •  1tsp. Nutmeg
  • 1tsp. Cinnamon
  • 1 tbsp. Browning/soya sauce/Sugar
  • 1tbsp Garlic powder
  • 1 tbsp. Paprika
  • 1 tbsp. Chilli powder
  • 1 tbsp. olive oil
  • 5 pimento seeds
  • 1 cup Honey
  • 1 tbsp. Butter
  • 1 whole Sweet pepper/Oranges/ Onion/Sage to stuff turkey

 

Jerk Marinade

  1. Combine all these ingredients and blend together. 1 tbsp. All Purpose seasoning, 1 tbsp. Jerk Seasoning, 1tbsp. Black pepper, 4 Branches of Fresh Thyme, 3 Branches Spring onion/ Scallions, 2 scotch bonnet peppers, 1 chopped onion, 1tsp. Nutmeg , 1tsp. Cinnamon , 1 tbsp. Browning/soya sauce/Sugar, 1tbsp Garlic powder, 1 tbsp. Paprika , 1tbsp.Chilli powder, 1 tbsp. olive oil, 5 pimento seeds, Lemon/lime juice. Then let it sit for 20 mins
  2. Wash your turkey and pat dry and remove neck and giblets
  3. Inject the Jerk Marinade into the turkey with a food injector or Use a knife to bore holes into it. Pour the Jerk marinade all over the turkey and massage seasoning into it. (Under skin)
  4. Stuff turkey with Vegetables and Fruits of your choice. i.e 1 whole onion/Sweet pepper/oranges/ sage/ etc.
  5. Glaze the turkey with 1 cup of Honey and and 1tbsp. of butter
  6. Marinate Turkey for up to 24hrs for best results. Min of 8 hours.
  7. 180 degrees for 3.5 hours for a Large Turkey – 40 mins per kg for a 4.5-6.5kg turkey, then 35 mins for every kg of turkey over that weight. As a guide, a turkey this size should take 3 hrs 20 mins-3 hrs 40 mins, plus 30-45 mins resting time. Preheated oven 180OC
  8. Serves 11-14
  9. Use Juices in the tray of the turkey to glaze. Also glaze with more honey
