It’s one our favourite time of the year! Easter! It’s all about the Fish! This recipe will satisfy yuh belly! 3 Different types of the best fish packed with flavour and spice to make yuh feel nice. Grandma always made the best fish, this is inspired by her. And check out the sides too! Bammy and festival! MMMMmmmm Yeah Mon!

 

  • 1 Snapper fish,
  • 1 Red bream Fish
  • 2 Cod pieces
  • 2 Cups flour
  • 4 eggs
  • 2 tsp. Black pepper
  • 2 tsp. Salt
  • 5 Fresh thyme
  • 4Spring onions
  • 4 Garlic cloves
  • 2 tsp Dried Thyme
  • 2 tsp. All purpose seasoning
  • 2 scotch bonnet pepper
  • 400g flour
  • 250g Cornmeal
  • 1tsp salt
  • 3 tsp. sugar
  • 1 tsp. Vanilla
  • Water
  • 2tsp. Baking powder
  • 155g bammy (1 pack)
  • 3 tbsp. sugar
  • ½ cup coconut milk.
  • ½ Red, yellow, green, orange bell peppers. (Sliced)
  • ½ cup sliced carrots,
  • 1 medium onion (rings),
  • Spring onions
  • Pimento seeds,

 

  1. Snapper Fish
  2. Wash fish with Lime, water and vinegar and pat dry.
  3. Season fish with salt and Black pepper and Thyme, massaging all over.
  4. Add ½ cup of vegetable oil into a frying pan on high heat, then add a small piece of spring onion, garlic clove and scotch bonnet pepper until the oil sizzles.
  5. Then gently add your snapper fish into the oil away from you and fry for around 10 mins on each side until dark brown.
  6. Place the fish on a paper towel to remove excess oil. And place into an oven on low heat.
  7. Red Bream Fried fish
  8. Wash fish with lime, water and vinegar and then pat dry.
  9. Season fish with salt, pepper, and thyme. Add to whisked eggs to the fish and massage together.
  10. Add 1 cup of plain flour to a bowl along with 1 tsp. of baking powder and all-purpose seasoning then mix together.
  11. (Add 1 cup vegetable oil to a frying pan on high heat and add 2 spring onions, 1 scotch bonnet pepper, thyme until they start to sizzle.)
  12. Add the fish into the flour bowl and cover the whole fish with flour. Shake excess flour off the fish and add to the frying pan. Fry fish for around 5-7 minutes on each side until golden brown, Place fish on a paper towel to drain excess oil. Then place in the oven at 100 degrees for 15 minutes.
  13. Festival
  14. Add Flour and cornmeal to a bowl with sugar and baking powder and mix together.
  15. Then pour in 1 cup of water gradually and mix together with your hands until you form a large dough ball, add more flour if too wet, and more water if too dry. Let the dough rest in the fridge.
  16. Add 1 cup of vegetable in your frying pan and wait for it to get hot!.
  17. Pull a piece off the dough and carefully roll into a long thick sausage shape with both hands then add to the frying pan and fry for 5 minutes on each until golden brown.
  18. Place festivals on a paper towel to remove excess oil.
  19. Bammy
  20. Soak Bammy in 100ml of coconut milk for 15 minutes.
  21. Then cut into quarter shapes.
  22. Add vegetable oil into a frying pan on high heat and place bammy into pan and fry for 3-4 minutes on each side until golden brown.
  23. Escovitch dressing
  24. Keep remainder of fish oil in a pan on medium heat and add mixed peppers, onion rings, carrots, pimento seeds, spring onions, black pepper, vinegar cook and steam for 7 minutes.
