Honey Roast Leg of Lamb

  • 1 Large Leg of Lamb
  • 1 Tbsp. Salt
  • 1 Tbsp. Pepper
  • 1 Tbsp. All-purpose seasoning
  • 1 Tbsp. Paprika
  • 1 cup Honey
  • 6 Sprigs fresh thyme
  • 6 Garlic cloves
  • 1 scotch bonnet pepper
  • 1 cup Olive oil
  • 2 chopped onions
  • 4 Chopped carrots
  • 1 cup mixed peppers
  • 1 cup of Baby Potatoes
  • 1 cup Broth
  • 1 tbsp. Flour
  • 1 tbsp. Butter

Firstly Wash Lamb with Lime and water and dry.

Then Poke holes all over the lamb

  1. Add 1 tbsp. of olive oil to the lamb and rub all over.
  2. Then add Salt, Pepper, All purpose, paprika and rub all over lamb.
  3. Add the garlic cloves inside the holes of the lamb, along with the fresh thyme and spring onions.
  4. Then add honey on top of the lamb
  5. Set the lamb aside.
  6. Add 2 chopped onions, 4 Chopped carrots, 1 cup mixed peppers, 1 cup of Baby Potatoes to a baking tray and drizzle oil, honey and black pepper on top.
  7. Then add your leg of lamb on top of vegetables.
  8. Place lamb in a in a pre-heated oven at 160 degrees for 1hr 30 mins.
  9. Take out of the oven and set lamb aside to cool.
  10. Then place baking tray on stove and add 1 cup of broth, 1 tbsp. flour or corn-starch and mix until you form gravy.
  11. Cut your lamb and serve with vegetables and gravy
  12. Will serve a family of 4-5
