Tender. Succulent. Tasty!

This Jamaican Oxtail recipe – Reduced Fat, is traditional Caribbean dish, it may take a little longer to cook, but its well worth the wait. We’ve opted to cut the fat away to keep a bit leaner! However it’s still so succulent, so tender. The key with cooking oxtail, the meat has to fall right off the bone to get that tender taste. This dish will definitely make the whole family satisfied. Ingredients

  • 5 Tsp Soy sauce or browning
  • 1 tbsp Tomato Ketchup
  • 2 cloveschopped garlic
  • 1tsp garlic powder
  • 2 tsp all purpose seasoning
  • 1 tsp black pepper
  • 1 tsp crushed Pimento seeds or all spice
  • 1 cup thyme
  • 1 cup mixed peppers
  • spring onion
  • 2 tspn vegetable oil
  • 1 tin butter beans
  • 1 chopped Scotch bonnet
  • 1 onions
  • 1 tomato

Optional: Flour, Carrots. Potato

Directions

  1. Wash oxtail with water and lemon or vinegar
    – Remove fat (For leaner option)
  2.  add 5 Tsp Soy sauce or browning to oxtail
    – 1 tbsp tomato Ketchup
    – 2 cloveschopped garlic
    – 1tspgarlic powder
    – 2 tsp all purpose seasoning
    – 1 tspblack pepper
    – 1 tsp Pimento seeds or all spice
    – 1 cupthyme
    – 1 cup mixed peppers
    then mix together
  3. Then add spring onion
    – Massage together
    – Marinate for up to 8 hours or more (Refridgerated)

4. Add 1Tbsp vegtable oil in medium high heat pot
– add 3lbs of oxtail in the pot and Cook untill brown for 15-20 mins
add 1Scotch bonnet
– 1 chopped onion
– 1 cup extra sweet peppers
– 1 chopped tomato
– Add water and level above meat
– Cook for 2-3 hours stiring every 20 min med heat
5. Add butter beans
– Add remaining veg (optional) and stir
– Simmer for 20 mins

Serves 4-6
