We have put our Caribbean spin on a shephards pie ITAL & VEGAN STYLE. full of tasty vegetables and ful of spice! This recipe is great for a big family or group of friends. Tastes great!

 

Ital/Vegan Pie

  • 4 White potatoes (washed peeled chopped)
  • 4 sweet potatoes (washed peeled chopped)
  • 1 Tbsp. Vegan or dairy free butter
  • ¼ cup soy or almond milk
  • Vegan cheese or dairy free
  • 2 tsp. Thyme
  • 1 tsp. crushed chillies
  • 1 tbsp. olive oil
  • ½ chopped onion
  • 4 garlic cloves
  • 1 chopped scotch bonnet pepper
  • 1 cup of diced swede and carrot
  • 2 cups of vegetable stir fry mix (kale, beans sprouts, sweet pepper, green beans, and cabbage)
  • ¼ cup sweet corn
  • 1 tsp. black pepper
  • 1 tsp sea salt
  • ½ cup chopped tomatoes
  • ¼ cup peas
  • ¼ cup vegan soy sauce

 

  1. Peel and chop 5 White potatoes and 5 Sweet potatoes and boil for 20 minutes until soft
  2. Drain water off and add 1tbsp. vegan butter and mix together.
  3. Then Mash potatoes together until soft, and add ¼ cup soy milk, and ½ cup vegan cheese and mix together.
  4. Also add 1tsp. crushed chilli and thyme and mix together then put aside.
  5. Use 1 tbsp. of olive oil on high heat and sortey your onion, garlic, and scotch bonnet pepper for 1 min.
  6. Then add your swede and carrot, stir fry mix, corn, peas, black pepper, sea salt, chopped tomatoes, thyme, vegan soy sauce and cook and simmer for 5 minutes.
  7. Pour your vegetables into a backing tray
  8. Then add your mashed potatoes on top and flatten and smooth out with your large spoon.
  9. Bake in a pre-heated oven for 25 mins at 180 degrees
  10. Serves 6-8
