  • 540g Ackee
  • 240g Callaloo
  • 2 Plantains
  • 1/4 Red bell pepper
  • 1/4 Green bell pepper
  • 1 scotch bonnet pepper
  • 1 medium onion
  • 3 tsp Thyme
  • 3 tsp paprika
  • 3 tsp black pepper
  • Olive oil
  1. Firstly Chop up your Plantain into slanted shapes then add to a bowl. Then add Black pepper, Thyme and paprika and shake da ting!
  2. Add 2 tbsp Olive oil to your frying pan on high heat add your Plantain and cook until golden brown on each side. Then rest plantain on paper towel.
  3. Then use a new frying pan and add 1 tbsp of olive oil on high heat and add chopped onions and scotch bonnet pepper and cook for 2 minutes. Then drain and add the Callaloo into the pan adding Black pepper, Thyme and paprika and cook for 5 minutes.
  4. Then with a new frying pan add olive oil on high heat and put in some chopped onions and cook then drain and add the Ackee to the frying pan on medium add Black pepper and thyme, and gently fold the Ackee over and simmer for 5 minutes.
  5. Then serve your Plantain, Callaloo and Ackee together on a plate.
