Nanny’s baked fish is proper home cooking.

Simple, fresh ingredients seasoned well and baked until tender. This is the kind of dish that filled the house with flavour growing up. Light, healthy and full of Caribbean taste.

Perfect with rice and peas, hard food or a fresh salad.


Recipe: Nanny’s Baked Fish

Ingredients 

2 whole fish (snapper or sea bream), cleaned | 1 medium onion, sliced | 1 tomato, sliced | ½ green bell pepper, sliced | ½ red bell pepper, sliced | 2 spring onions, sliced | 2 garlic cloves, minced | 1 scotch bonnet pepper (optional) | 1 tsp black pepper | 1 tsp all-purpose seasoning | 1 tsp dried thyme | 2 tbsp olive oil | Juice of 1 lime | Salt (to taste)


Method

Wash the fish with lime or vinegar and water, then pat dry.

Make a few slits on each side of the fish.

Season inside and out with salt, black pepper, all-purpose seasoning and thyme.

Drizzle with olive oil and lime juice.

Stuff the fish with onion, tomato, peppers, spring onions, garlic and scotch bonnet if using.

Place fish in a baking tray and add any remaining vegetables around it.

Cover with foil and bake at 180°C for 25–30 minutes.

Remove foil and cook for a further 10–15 minutes until the fish is tender and slightly browned.

Serve hot.
