Escovitch Salmon

Crispy salmon. Sweet peppers. Tangy vinegar bite.

This one takes me straight back to Sunday dinners and special occasions ????‍????

  • 4-6 Salmon fillets 
  • 1/2 tsp salt 
  • 1/2 tsp black pepper 
  • 1 tsp all purpose 
  • 2 tbsp. Olive oil 
  • 1/2 Green, Red, Yellow bell peppers strips 
  • 1 carrot peeled strips 
  • 1 medium onion rings 
  • 1 spring onion strips 
  • 1/2 scotch bonnet sliced 
  • 1 tbsp. Unsalted butter 
  • 50ml white vinegar 
  • 1 tsp sugar 
  • 5 pimento seeds 
  1. Score salmon diagonally then season lightly with /salt, black pepper and all purpose seasoning.
  2. In a pan add olive oil on a medium heat then pan fry the salmon for 5-6 minutes on each side until cooked then remove. 
  3. Add some butter to pan and melt. Then add all vegetables along with vinegar and sugar and salt pepper pimento seeds then stir and cook for 5-7 minutes until caramelised. 
  4. Add salmon back in and place vegetables on top the. Steam on a low heat for further 5 min.
