Escovitch Salmon
Crispy salmon. Sweet peppers. Tangy vinegar bite.
This one takes me straight back to Sunday dinners and special occasions ????????
- 4-6 Salmon fillets
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp all purpose
- 2 tbsp. Olive oil
- 1/2 Green, Red, Yellow bell peppers strips
- 1 carrot peeled strips
- 1 medium onion rings
- 1 spring onion strips
- 1/2 scotch bonnet sliced
- 1 tbsp. Unsalted butter
- 50ml white vinegar
- 1 tsp sugar
- 5 pimento seeds
- Score salmon diagonally then season lightly with /salt, black pepper and all purpose seasoning.
- In a pan add olive oil on a medium heat then pan fry the salmon for 5-6 minutes on each side until cooked then remove.
- Add some butter to pan and melt. Then add all vegetables along with vinegar and sugar and salt pepper pimento seeds then stir and cook for 5-7 minutes until caramelised.
- Add salmon back in and place vegetables on top the. Steam on a low heat for further 5 min.
