Spice up your stuffing in the festive season! Spiced with jerk flavours with a hint of rum and topped with sweet mangoes and apricots. This recipe is delicious and will make you a family favourite. Great with as a side along with your Christmas dinner!

  • 1 tbsp. Olive oil
  • 1 tbsp. Butter
  • 20g Sage or Rosemary
  • 1 medium onion diced
  • 2 tsp Black pepper
  • 2 tsp All purpose seasoning
  • 2 tsp Paprika
  • 1 tsp Garlic
  • 500g pork mince (or any of your choice)
  • 70g breadcrumbs
  • 150g Chesnuts
  • 100g dried mango
  • 100g dried apricots
  • 1tsp salt
  1. Firstly you’ll need to add olive oil to your frying pan on a high heat, then add butter, sage, onions, black pepper, all purpose seasoning, paprika, garlic then cook until soft and set aside to cool down.
  2. In a separate bowl add some pork mince along with some breadcrumbs, Chesnuts, cranberries, dried apricots and mango then season with salt, pepper, all purpose seasoning
  3. Dash in the the onion mix to the mince then add a shot of rum then mix up di ting!
  4. Place the mix into a casserole dish then flatern down and add some dried mangoes and apricots on top then cook in a preheated oven 190 degrees for 45 minutes
