Mango Ketchup is made using fresh mango pulp from the island of Nevis known for its sweet mango that come in over 100 varieties. A taste of the islands in a savoury dip. This dip offers a luscious blend of island mango and spices in a vinegar base. The perfect recipe for some bbq mango chicken to make at home with family and friends.

2 Leg quarter chicken

1tbsp.Olive oil

1 tsp. Sea salt

1 tsp. Black pepper 

1 tsp. Ground pimento 

1 tsp. Garlic powder 

1 tsp. Paprika 

350ml Flauriel Sugar town ketchup 

350ml BBQ sauce 

1 large sweet potato 

Firstly pre-heat your oven at 180 degrees

Prep your chicken then use a knife then score the leg and thigh. This will help the seasoning imbed into the chicken to create maximum flavour.

In a small mixing bowl add all of the seasoning and mix together and create a rub, then rub seasoning all over the chicken. Add 175ml of  mango ketchup and BBQ sauce and massage over chicken (Cover Leave in the fridge for unto 24 hours) then place oven for 40 mins. Then remove turn over and cook for further 10 minutes.

Wash sweet potato then cut into fries. Add into pot with boiling water then cook for 10 minutes. Pat dry then place on baking fry and cook for 30 minutes, turning over halfway through.
