This isn’t just any Greek salad…
This is a Greek salad with flava – loaded with colour, crunch, and succulent, seasoned chicken.

Ingredients

For the Chicken:

•2 chicken breasts

•¼ tsp sea salt

•1 tsp black pepper

•1 tsp garlic powder

•1 tbsp all-purpose seasoning

•1 tbsp jerk seasoning

•Drizzle of olive oil

For the Salad:

•8–10 cherry tomatoes, halved

•½ cucumber, diced

•1 green bell pepper, diced

•1 red onion, diced

•Handful of Kalamata olives

•Olive oil (drizzle)

•2 tbsp red wine vinegar

•Salt and pepper to taste

•150g feta cheese, crumbled

•Juice of 1 lemon

🧑🏾‍🍳 Method

1. Marinate & Cook the Chicken:

•In a bowl, season chicken breasts with sea salt, black pepper, garlic powder, all-purpose seasoning, jerk seasoning, and a drizzle of olive oil. Rub well to coat.

•Air fry the chicken. Breast for 18-20 minutes at 180 degrees. 

2. Make the Salad:

•In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and olives, feta cheese 

•Drizzle with olive oil, red wine vinegar, and lemon juice. Add salt and pepper to taste.

•Toss well and let sit for 5–10 minutes to allow the flavours to come together.

3. Make the Flava Dressing:

•Once the salad has rested, there will be excess juice at the bottom — don’t waste it! This is your homemade dressing.

•Pour the excess juice into a small jar, add an extra squeeze of lemon if desired, shake it up and drizzle over the salad when serving.

    1. Assemble 

Top sliced chicken and place on stop of the salad then drizzle dressing over chicken.
