2 large cooked whole lobsters (frozen, defrosted)

4tbsp butter

2tbsp minced garlic

2 spring onions diced

Handful parsley

1tsp thyme

2 tsp salt

1 tsp black pepper

1 tsp chilli flakes

For the sauce

1 tbsp oil

1 onion diced

4 cloves garlic diced

400g tinned tomatoe

1 tsp salt

1 black pepper

1 tbsp all purpose seasoning

300g spaghetti


In a small bowl, add butter, minced garlic, spring onions, parsley, thyme, chilli flakes, salt & black pepper and mix to a paste

Get your lobster and With a sharpe knife, cut length way from the head to the tail leaving your with two halves.

Take out the stomach sacks with a spoon and clean lobster with water. Rub the garlic butter inside the lobster and leave to rest

In a large pan, add oil, onions and garlic and any remainder of garlic butter, cook till softened. Add tinned tomatoes, chilli flakes; salt & black pepper. And all purpose seasoning and a likkle water and combine.

Add in the lobster shell down, and cover and simmer for 10 minutes.

Add spaghetti to salted boiling water and boil for 10 mins. Once the lobster has simmered remove lobster and add the cooked spaghetti in and toss around.
