This recipe brings back memories of hardship back in the days, it’s a cheap affordable meal back when our parents were younger, but its delicious and easy to make. Cook up mackerel with dumplings and green banana! Perfect for breakfast lunch or dinner.

  • 400g tinned mackerel
  • 1 medium onion chopped
  • ½ green bell pepper
  • 2 garlic cloves chopped
  • 1 large tomato chopped
  • 1 tsp Black pepper
  • 2 tbsp. ketchup optional
  • Fresh thyme
  • 2 cups plain flour
  • ½ tsp salt Likkle water

Add vegetable oil to your frying pan on a medium heat, then add onions garlic, bell peppers, scotch bonnet and tomatoes and cook down until soft.

Add in some fresh thyme, along with your tinned mackerel. Crush the mackerel down in the pan then season with a likkle salt and black pepper. Mix all the ingredients together. Then cook for 5-7 minutes.

Green banana & dumpling Add 1 litre of water and bring to a boil. Add a likkle salt and lime juice. Score green banana down the middle, and cut of ends add to boiling water.

For dumplings add 2 cups of plain flour to a mixing bowl, add a likkle salt, then gradually a some water mix together with a spoon until you form a dough, then start to knead consistently until you form a smooth dough, add water if to dry or add more flour if too wet. Then let the dough sit for 5 minutes.
