This is a Caribbean and west African fusion with Jamaican stew chicken and west African jollof rice all in one pot! this recipe is great for all the family to enjoy.
- 600g Boneless chicken legs & thighs pieces(skin off)
- 2 tsp.Salt
- 2 tbsp.Black pepper
- 1 tsp. Pimento
- 2 tbsp. All purpose seasoning
- 1 tsp. Browning
- 2 tbsp. Canola oil
- 4 fresh tomatoes
- 2 red bell peppers
- 2 red onions
- 2 scotch bonnet peppers
- Likkle water
- 150g. Tomato purée
- 2 bay leaves
- 4 sprigs of fresh thyme
- 2 Maggie cubes
Season meat with salt, black pepper, pimento, all purpose and browning mix together and marinate Di ting
In a large pot, add some canola oil on a medium heat, then add the chicken and brown the meat.
Now take the meat out and place in a separate bowl. Use keep the oil already in the pot then add 1 diced red onion and some tomato purée paste then cook down until Caramelised.
Blend together jollof pepper sauce in a blender
Add in Jollof sauce and stir well then season with salt, black pepper. All
purposes,Bay leaves , fresh Thyme and Maggie cubes
Now add in stew chicken pieces and mix together. Then add in 4 cups of washed rice.
