Vegan Plantain Pie
If you love Plantains you’ll love this recipe! No matter if your a vegan or non vegan. This recipe is filled with delicious spicy vegetables topped with sweet tasting plantains. Great for family and friends to enjoy- Give it a try!

- 4 Over Ripe Plantain (Chopped into circles)
- 250g Callaloo
- 1 medium onion (diced)
- 1 medium red onion (diced)
- 1 Tomato (chopped)
- 4 garlic cloves (chopped)
- ¼ red, green, yellow bell peppers (diced)
- 1 scotch bonnet pepper
- Olive oil
- 1 tsp. Black pepper
- 1 tsp. Curry powder
- 1 tsp. paprika
- 500g Tofu
- 250ml Soy milk
- 2 tbsp. Humous
- 1 tbsp. Black salt/ Himalayan salt
- 100g Nutritional yeast
- 1 tsp. Turmeric
- Egg replacer (Optional)
- 6 eggs (Non vegan option)
- Firstly you’ll need to add 2 tbsp. Olive oil to a frying pan on high heat and sorte your onions, garlic, mixed peppers, tomatoes, and scotch bonnet for 2 minutes. Then add Callaloo.
- Then add Black pepper, curry powder and paprika and mix together and cook for further 2 minutes and leave to side.
- Making Plantain
- Use over ripped plantain, cut into circle shapes.
- Use a new frying pan and add 2tbp. Of oil on high heat and fry plantain for 2-3 minutes on each side until golden brown and place on paper towel to remove excel oil.
- For Non Vegan: Whisk 6 eggs together and mix with vegetable mix
- Vegan may also use Egg replacer as a subtitute for eggs. (Vegan)

- In a blender combine 800g Tofu, 250ml Soy milk, 2 tbsp. Humous, 1 tbsp. Black salt/ Himalayan salt, 100g Nutritional yeast, 1 tsp. Turmeric and blend together for 2 minutes until a thick consistency. Then place in fridge
- Use a mixing bowl and add the sorte mix along with the blended mixture and mix together
- Use a clean frying pan and add 1 tbsp. of oil on medium heat and add the mixture into the frying pan.
- Then place the plantain on top and round the mixture until covered.
- Then add to a pre heated over at 180 degrees for 40 minutes
- Let it rest for 10 minutes then serve..
