Warm & comforting rice dish
A delicious side to go with almost anything! Full of Flava that will warm your tastebuds and complete a tasty meal. Feed 4-6 people
- Sunflower oil
- 1 diced onion
- 4 gloves of garlic diced
- 1 tsp salt
- 1 tsp pimento or all spice
- 1 tsp black pepper
- 1 tbsp all purpose seasoning
- 350g Pumpkin or Butternut squash diced
- 5 sprigs of Thyme
- 150ml water
- 400ml coconut milk
- 350g rice
- 3 tbsp vegetable granules
- 1 scotch bonnet
- Heat oil in the pan, dash onions and garlic and cook until soft.
- Season with salt, garlic, pimento, black pepper, all purpose seasoning and fling in the diced pumpkin, thyme and mix together.
- Pour in water, and coconut milk and mix together. Add scotch bonnet Boil up di ting until Pumpkin is semi soft approx 15 minutes.
- Pour in washed rice, and make sure the liquid is just above the rice. Bring to boil and turn down to a low-medium heat.
- Simmer to until rice absorbs the water.
