Warm & comforting rice dish

A delicious side to go with almost anything! Full of Flava that will warm your tastebuds and complete a tasty meal. Feed 4-6 people

  • Sunflower oil
  • 1 diced onion
  • 4 gloves of garlic diced
  • 1 tsp salt
  • 1 tsp pimento or all spice
  • 1 tsp black pepper
  • 1 tbsp all purpose seasoning
  • 350g Pumpkin or Butternut squash diced
  • 5 sprigs of Thyme
  • 150ml water
  • 400ml coconut milk
  • 350g rice
  • 3 tbsp vegetable granules
  • 1 scotch bonnet
  1. Heat oil in the pan, dash onions and garlic and cook until soft.
  2. Season with salt, garlic, pimento, black pepper, all purpose seasoning and fling in the diced pumpkin, thyme and mix together.
  3. Pour in water, and coconut milk and mix together. Add scotch bonnet Boil up di ting until Pumpkin is semi soft approx 15 minutes.
  4. Pour in washed rice, and make sure the liquid is just above the rice. Bring to boil and turn down to a low-medium heat.
  5. Simmer to until rice absorbs the water.
  6. TING DONE! Enjoy
