we’ve teamed up with Old Jamaica ginger beer to bring you these delicious saltfish fritters! A blend of sweetness and fiery spice from the ginger beer gives these saltfish fritters the best taste ever!
- 300g Saltfish
- 1/2 onion chopped diced
- 2 spring onions diced
- 2 garlic cloves minced
- 1/2 green bell pepper diced
- 1 tomato chopped
- 1/2 scotch bonnet pepper
- 240ml D&G Ginger beer
- 125ml water
- 240g Plain flour
Firstly you’ll need to boil the Saltfish for 10 minutes, rinsing and changing the water twice . (Check the Saltfish to your required salt level) The use a fork to break up in to small pieces then set aside.
Now we are going to caramelise the veggies, in a frying pan add 1 tbsp. Vegetable oil and bring to a medium heat. Add onions, garlic, spring onions, bell peppers, tomato and scotch bonnet then cook down for 5 minutes until soft. Add flour to a large mixing bowl along with the veggies, saltfish and Ginger beer with a likkle water, then mix together to form a sloppy consistency.
Now in a frying pan add some vegetable oil on a high heat. Then pour in fritter mixture with a large spoon, then turn the heat down to medium. Cook for 5 minutes on each side until golden brown. Then dry on paper towel to remove excess oil.
