The Ultimate Veggie breakfast! packed full of FLAVA! Sweet, savoury with a hint of spice! Start your weekend off with a bang and try this delicious recipe!

  • 250ml Plant based milk
  • 1 tsp cinnamon
  • 1 tsp. nutmeg
  • 2 tbsp. Brown sugar
  • 1 tsp vanilla
  • 2 tbsp. melted butter
  • olive oil (shallow fry)
  • Sliced Hardough bread
  • 1 onion diced
  • 4 garlic cloves diced
  • 1 scotch bonnet pepper diced
  • 520g ackee drained
  • 1 tbsp. butter
  • 2 tsp. black pepper
  • 1 tsp. pimento / all spice
  • 280g callaloo canned
  • 1 tsp. dried thyme
  • Honey/ syrup

In a small ball add some plant based milk, cinnamon, nutmeg, sugar, vanilla, butter then mix together.

Use a large frying pan and add a Likkle olive oil on a shallow fry on a medium to high heat. Dip your bread into the milk mixture on both sides then fry  in oil until golden brown on each side.

Use the same frying pan and cook down some 1/2 onion and 2 garlic cloves until soft. add 1/2 scotch bonnet pepper, Ackee, black pepper and dried thyme, pimento, then mix together until ackee is scrambled.

For the callaloo, add 1/2 diced onion, garlic and cook down until soft then add callaloo, scotch bonnet, black pepper, dried thyme, and simmer for 5 minutes until cooked.

Plate up by adding 5 sliced of hardough bread then, Ackee and callaloo on either side. Plantain scaterred around dish, then drizzle syrup all over
