  • 540g Callaloo
  • 400g Plain flour
  • 1 tsp. Baking powder
  • ½ Red bell pepper (diced)
  • ½ green bell pepper (diced)
  • ½ Yellow pepper (diced)
  • 1 medium onion
  • 6 tbsp. vegetable oil
  • 2 tsp. paprika
  • 2 tsp. Garlic
  • 2 tsp. Thyme
  • 2 tsp. Pepper
  • 1 tsp. salt.
  • 1 cup water
  • 1 scotch bonnet pepper
  • 1 tomato
  • 1 tsp. ginger
  1. Firstly add 2 tbsp. of vegetable oil to a frying pan on high heat, and add 1 medium onion, garlic cloves and mixed peppers and sortey for 3 mins.
  2. Then add pepper, all purpose, paprika, garlic, ginger, salt, Thyme, then add callaloo and mix together.
  3. Add 1 chopped scotch bonnet pepper, and 1 chopped tomato along with seasonings.
  4. Set aside.
  5. In a separate bowl civ 400g flour, and add 1 tsp. baking powder, all purpose seasoning, paprika, garlic, and callaloo mix along with water and mix together until you get a sloppy consistency.
  6. Add 4 tbsp. vegetable oil and shallow fry a large spoonful of the Callao mix and cook for 5 mins on each side on medium heat until golden brown.
  7. Rest on paper towel to remove excess oil.
  8. Then rest for 10 minutes and serve.
