- 540g Callaloo
- 400g Plain flour
- 1 tsp. Baking powder
- ½ Red bell pepper (diced)
- ½ green bell pepper (diced)
- ½ Yellow pepper (diced)
- 1 medium onion
- 6 tbsp. vegetable oil
- 2 tsp. paprika
- 2 tsp. Garlic
- 2 tsp. Thyme
- 2 tsp. Pepper
- 1 tsp. salt.
- 1 cup water
- 1 scotch bonnet pepper
- 1 tomato
- 1 tsp. ginger
- Firstly add 2 tbsp. of vegetable oil to a frying pan on high heat, and add 1 medium onion, garlic cloves and mixed peppers and sortey for 3 mins.
- Then add pepper, all purpose, paprika, garlic, ginger, salt, Thyme, then add callaloo and mix together.
- Add 1 chopped scotch bonnet pepper, and 1 chopped tomato along with seasonings.
- Set aside.
- In a separate bowl civ 400g flour, and add 1 tsp. baking powder, all purpose seasoning, paprika, garlic, and callaloo mix along with water and mix together until you get a sloppy consistency.
- Add 4 tbsp. vegetable oil and shallow fry a large spoonful of the Callao mix and cook for 5 mins on each side on medium heat until golden brown.
- Rest on paper towel to remove excess oil.
- Then rest for 10 minutes and serve.
