Be creative with your plantain and make this delicious LOVE BOAT. The perfect dish for a special occasion, whether it be valentines, a birthday or date night. Roasted plantain with a beautiful coconut chickpea curry on top. Tek a sail pon this love boat nuh man?!
- 2 Ripe Plantains
- Olive oil
- 1 tsp. sea salt
- 1 tsp. Black pepper
- 1 tsp. Paprika
- 1 tsp. dried thyme
- ½ onion diced
- 2 garlic cloves
- 1 tsp. ginger
- 2 tbsp. Caribbean curry powder
- 200ml coconut milk
- 400g Canned chickpeas
- Fresh parsley diced (Garnish)
- Chilli flakes garnish
Score a line down the middle of the plantain then remove the skin. Now score another 2 lines down the middle and remove a thin piece of plantain and use a knife to carefully make a deep line score and open up.
Place in a mixing bowl and add some olive oil, season with salt, black pepper, paprika, dried thyme then massage all over. Add to a pre-heated oven for 30 mins at 180 degrees until cooked.
In a frying pan add olive oil on a medium heat, add onions, garlic then caramelize for a few minutes. Add ginger and curry powder then cook down until dark. Add coconut milk and bring to a boil and stir to create a thick coconut curry sauce. Add chickpeas stir and cook for 5 minutes. Pour chickpeas on top of the plantain and serve. Garnish with parsley and chill flakes.
