Bringing you guys another Caribbean x west African fusion here. Growing up in a Caribbean household frying yam wasn’t really a ting, we usually just fried plan-TIN. But we started seeing our African friends frying yam, which they usually had with a pepper sauce. We’ve decided to combine this recipe with a sweet and spicy scotch bonnet jam sauce that complements the savoury yam flava. Give it a try!

  • 600g Yam
  • 1 tsp. sea salt
  • 1 tsp. dried thyme
  • 1 tsp. black pepper
  • 2 tsp. corn flour
  • 150 ml coconut milk
  • Vegetable oil (deep fry)
  • Scotch bonnet Jam pepper sauce
  • 2 scotch bonnet peppers
  • 1 red bell pepper
  • Likkle wata
  • 100 ml vinegar
  • 4 tbsp white sugar
  • 300g jam or fresh strawberries

Firstly peel and wash your yam, you can use any kind of yam for this recipe. Slice and Cut the yam into fries like chips as equally as possible, then soak in water or even better part boil for 10 minutes in boiling water.

Pat the yam fries dry with a paper towel, then season da ting with salt, thyme and pepper, then add corn flour and coconut milk and mix together, making sure all the ingredients are incorporated together

Use a blender and add scotch bonnets and red bell pepper, a likkle wata then blend until smooth. Now in a saucepan add some vinegar, sugar and bring to a bowl, then add in the pepper mixture then bring to a boil for 10 minutes. Add in some fresh strawberries or strawberry jam and mix until thick. Then cool down in the fridge and serve.
