Stewed sausages with plantain mash, if Jamaicanzs made bangers and mash this would be it!. made with a delicious Caribbean stew and a creamy plantain mash. the perfect comfort food to make you feel good!
Ingredients
Stewed Sausages
6 sausages of your choice
2 tbsp jerk seasoning
1 tbsp all-purpose seasoning
½ tsp salt
½ tsp black pepper
1 tsp olive oil
½ onion, finely diced
4 garlic cloves, finely diced
2 spring onions, finely diced
2 tbsp chicken granules
½ cup water
1 tsp browning
1 tbsp sugar
1 tbsp ketchup
3–4 fresh thyme sprigs
Fresh parsley, finely chopped
Plantain Mash
2 ripe plantain, peeled and sliced
1 tbsp unsalted butter
1 cup milk
Handful of grated cheese
Salt and black pepper, to taste
Method
Air-Fried Sausages

Season sausages with jerk seasoning, all-purpose seasoning, salt and black pepper.

Place in the air fryer at 190°C for 10–12 minutes, turning halfway, until golden and cooked through. Set aside.
Stewed Sauce

Heat olive oil in a pan over medium heat.

Add onion, garlic and spring onions and sauté until soft and fragrant.

Stir in chicken granules, browning, sugar and ketchup.

Pour in water and add thyme sprigs. Bring to a gentle simmer.
Combine

The air-fried sausages and add them into the sauce.

Stir well, cover and simmer for 10 minutes, allowing the sausages to absorb the gravy.

Finish with chopped parsley.
Plantain Mash

Boil plantain in salted water until soft. Drain well.

Mash with butter, milk, cheese, salt and black pepper until smooth and creamy.
To Serve
Spoon the plantain mash onto plates and top with the rich stewed sausages and gravy. Serve hot for pure comfort.
