Escovitch Fish (Air Fryer)
Crispy snapper topped with that classic spicy, tangy escovitch dressing — but made in the air fryer for a lighter, easier version. Less oil, less mess, same big Caribbean flavour.

???? Ingredients (Serves 2–3)
Fish
• 2 whole snapper (cleaned)
• 1 tbsp olive oil
• 1 tsp all-purpose seasoning
• 1 tsp complete seasoning
• 1 tsp garlic powder (or fresh garlic)
• Salt and black pepper, to taste
Escovitch Dressing
• 1 onion, sliced into rings
• 1 carrot, julienned
• 1 bell pepper, sliced
• 1 scotch bonnet (sliced or whole)
• 2 sprigs fresh thyme
• 3 tbsp white vinegar
• 1–2 tsp sugar (to taste)
• Salt and black pepper, to taste

???? Prep
1. Clean the fish
Rinse and pat dry with paper towels.
2. Score the fish
Make 2–3 cuts on each side so the seasoning can go deep.
3. Season
Rub the fish with olive oil, then season with all-purpose, complete seasoning, garlic, salt and pepper.
Massage well, making sure seasoning gets into the cuts.

???? Method (Air Fryer)
1. Cook the fish
Place fish in the air fryer and cook at 200°C for 20 minutes, flipping halfway through, until golden and cooked through.
2. Prepare the escovitch veg
In the same air fryer (no need to clean), add onion, carrot, bell pepper, scotch bonnet and thyme.
3. Build the dressing
Add vinegar, sugar, salt and pepper. Toss everything together.
