This delicious stew Beef recipe is an extremely tender & very hearty dish with a delicious big lean cuts of meat, herbs and seasonings and fresh vegetables to make it a recipe for the whole family. Growing up, we weren’t so keen on this dish, as it was often dry! However we’ve created this recipe that is so tender & juicy! You’ll love it!
- Brown stew beef
- 2lbs Stewing beef (cut in 2 inch cubes)
- 2 tsp Browning or soy sauce
- 1tsp salt
- 1tsp pepper
- 2 tsp all-purpose seasoning
- 1 tsp paprika
- 4 branches fresh thyme
- 1 scotch bonnet pepper
- 1 chopped onion
- 4 cloves garlic
- 4 chopped spring onions
- 2 beef stock cubes mixed with 2 cups water /beef broth/ gravy
- 1 tsp pimento seeds/ all spice (optional)
- ½ cup mixed peppers (cut in squares)
- ½ cup of carrots
- Baby potatoes (optional)
- Dumplings (spinners)
Directions
- Cut your stewing beef into 2 inch cubes and season with 2 tsp Browning or soy sauce, 1tsp salt, 1tsppepper, 2 tsp all-purpose seasoning, 1 tsp paprika and marinate in fridge overnight or min of 2hrs.
- Use a pot and place 2 tbsp. of cooking oil on high heat and cook 1 chopped onion, 4 cloves garlic 4 chopped spring onions for 3 mins
- Then place your beef in the pot and brown the meat for up to 10 minutes
- Then add 2 cups of beef broth (2 beef stocks mixed with water) and stir well.
- Add your fresh Thyme
- Then cook beef for up 45mins on medium heat until meat is tender.
- Add ½ more cups of beef broth or water. (if needed)
- Then add ½ cup mixed peppers (cut in squares), ½ cup of carrots and dumpling (spinners) scotch bonnet pepper and simmer for another 15 more minutes.
