Pepper Steak Chimichurri Pasta Salad Fresh salad. Wholemeal pasta salad. Juicy pepper steak. Green seasoning chimmi curri.
Healthy Caribbean food that still tastes GOOD.
Same FLAVA. Just lighter.
- 300g sirloin steak, sliced into strips
- 1 tsp all-purpose seasoning
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp browning
- 1 tbsp olive oil
- 1 cup light beef stock
- ½ onion, sliced
- ½ red bell pepper, sliced
- ½ yellow bell pepper, sliced
- 2 spring onions, sliced
Chimmi Curri
- Handful fresh parsley
- 2 spring onions
- 2 garlic cloves
- ½ scotch bonnet
- Pinch chilli flakes
- 3 tbsp olive oil
- Juice of 1 lime
- Salt and black pepper
Wholemeal Pasta Salad
- 150g wholemeal fusilli pasta, cooked
- 100g sweetcorn
- ½ red bell pepper, diced
- 2 tbsp Greek yoghurt
- Fresh parsley, chopped
Fresh Salad
- Handful rocket
- 1 tomato, diced
- ½ cucumber, diced
- ½ red bell pepper, sliced
- 2 spring onions, sliced
- 1 tbsp olive oil
- Juice of ½ lemon or lime
Method
- Slice the steak into strips and season with all-purpose seasoning, salt, black pepper and browning.
- Heat olive oil in a frying pan over a medium-high heat and brown the steak. Remove and set aside.
- Add the beef stock to the pan and scrape up all the flavour from the bottom.
- Add onions, bell peppers and spring onions and cook until softened and slightly caramelised.
- Add the steak back into the pan.
- Pour a little water into the bowl used to season the steak, swirl it around and pour into the pan.
- Mix together and simmer on a low heat until the steak is tender and coated in a light gravy.
- For the chimmi curri, add parsley, spring onions, garlic, scotch bonnet, chilli flakes, olive oil, lime juice, salt and pepper to a blender. Pulse until coarse.
- For the pasta salad, mix together the cooked wholemeal pasta, Greek yoghurt, sweetcorn, diced bell peppers and parsley.
- For the salad, combine rocket, cucumber, tomatoes, bell peppers and spring onions. Dress with olive oil and lemon juice.
- Assemble with pasta salad, fresh salad, pepper steak and plenty of chimmi curri.
