Easy Oven Jerk Chicken
With Homemade Jerk Sauce
A no-fuss jerk chicken recipe packed with flavour. Marinated well, oven-baked until juicy, then finished with a quick homemade jerk sauce for extra flava.
Serves: 3–4
Ingredients
Jerk Chicken

1 pack chicken (thighs, drumsticks or mixed pieces)

1 scotch bonnet pepper, finely chopped (use half for a milder heat)

1 cup spring onions, chopped
-
1 tbsp pimento (allspice) seeds, crushed
-
2 tsp fresh thyme leaves
-
4 tbsp jerk seasoning paste
-
1 tsp chicken seasoning
Jerk Sauce
-
1 tbsp reserved seasoning mix
-
2 tbsp jerk BBQ sauce
-
½ cup water
-
1 tbsp ketchup or sweet chilli sauce
Method
Season the Chicken

Wash the chicken with lemon and water, then pat dry. Using a knife, slit the chicken to help the seasoning penetrate.

In a bowl, mix together the scotch bonnet, spring onions, pimento seeds, thyme, jerk seasoning paste and chicken seasoning.

Massage the seasoning thoroughly into the chicken, making sure it gets into the slits.

Cover and marinate in the fridge for up to 8 hours (or overnight for best flavour).
Cook the Chicken

Preheat the oven to 180°C (fan 160°C).

Place the chicken on a baking tray and cook for 45 minutes, turning halfway, until cooked through and nicely caramelised.
Make the Jerk Sauce

Add 1 tbsp of the seasoning mix to a small pan over medium heat.

Stir in the jerk BBQ sauce and water, mixing well.

Add the ketchup or sweet chilli sauce to mellow the heat. Simmer for 3–5 minutes until slightly thickened.

- Chopped 1 Scotch bonnet or 1/2 for milder option
Add:
Cup of chopped spring onion
1 Tsp Chopped Pimento seeds
2 Tsp Fresh Thyme
4 Tbsp Jerk seasoning (Paste )
Mix together
1 Tsp chicken seasoning
1 Tsp Jerk seasoning
Mix together
- Massage seasoning into chicken and slits
- Marinate chicken in fridge for upto 8 hours
- Then cook for 45 mins in oven 180 degrees
Making Jerk sauce
1 Tbsp of Seasoning mix in pot on medium heat
Tbsp Jerk bbq sauce
Add 1/2 Cup of water then mix
Add 1 Tbsp of Ketchup or sweet chilli to mild down
Serves 3-4
