A delicious healthy protein packed salad with crispy roasted sweet potatoes and chickpeas and a Spicy cool Chilli herb yogurt dressing, add some meat fish or more veggies if you prefer!

INGREDIENTS

  • 1 Large Sweet potato Peeled and cubed.

  • 400g Tinned Chickpeas washed and drained.

  • 1 tsp. sea salt

  • 1 tsp coarse black pepper

  • 1 tsp. garlic powder

  • 1 tsp. chilli flakes

  • 2 tbsp. olive oil

  •  1 Red onion diced.

  • 1 romaine Lettuce

  • ½ Cucumber diced

  •  Cherry Tomatoes halved.

  • Lemon juice

  • Saltg and pepper to taste

  • Dressing

  • 4 tbsp. Yogurt

  • Handful of Mint

  • 6 Fresh thyme leaves

  • Roasted Garlic cloves

  • 1 Scotch bonnet pepper

 

METHOD

  1. Add sweet potatoes to a mixing bowl then season with above seasonings and olive oil. Do the same with the chickpeas in a separate bowl.

  2. Roast the Sweet potatoes separately in a Air fryer for 20 until golden and crispy. Then repeat with chickpeas for 10 minutes. Then cool down.

  3. For the salad add red onions, lettuce, cucumber, and tomatoes to a mixing bowl with lemon juice, salt and black pepper and mix.

  4. To a blender add yogurt, mint, fresh thyme leaves, roasted garlic, 1 scotch bonnet and pulse for 5-10 seconds then set in fridge for 10 minutes.

  5. Assemble salad in a bowl by adding Salad, then roasted sweet potatoes and chickpeas then drizzle on Chilli herb Yogurt dressing.
