Everyone needs a delicious desert after a Christmas feast! Look no further, This Christmas coconut cake will have the whole family coming back for more! Using O’s coconut flour gives this cake amazing FLAVA! Its light, fluffy and gluten free!

  • 4 beaten eggs
  • 115g unsalted butter
  • 227g 0’s Coconut flour x2
  •  400ml coconut milk
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. flaxseed
  • 2 cup desiccated coconut
  • 1 tsp baking powder
  • 4 tbsp. Golden syrup.

In a large mixing bowl add 4 eggs and whisk until smooth, add butter, O’s coconut flour, coconut milk, vanilla, cinnamon, nutmeg, flaxseed, desiccated coconut, baking powder and mix together until smooth. Pour to 9-inch cake tin.

Add to pre-heated oven on 180 degrees for 1 hour. Check cake with a toothpick to see if ready. If it comes out dry, your cake is ready. Add syrup on top of the cake and spread across evenly, then decorate with desiccated coconut on top. Enjoy with custard or ice cream!
