Carrot cake is a traditional caribbean treat! our grandmother would always make this recipe when we was well behaved. we prefer carrot cake with icing on although it is just as delicious without. This sweet recipe is has a blend of carrots rainsins and carrot juice to give it a incredible flavour. Give this easy recipe a try, we have a added a modern twist to this. you wont be dissapointed.

 

Carrot cake

  • 3 Cups plain Flour
  • 1 tsp cinnamon
  • 1tsp nutmeg
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 4 eggs (not beaten)
  • 1 cup vegetable oil
  • 1 tbsp. vanilla
  • 1 ½ cup of brown or white sugar
  • 2 cups of carrots (peeled and shred)
  • 1 cup of raisins
  • Carrot juice or orange juice (250ml) (optional for more consistent mix)
  • Cream cheese icing (optional)

 

  1. Firstly add 4 eggs, 1tbsp. vanilla, 1 ½ cups of brown/white sugar, ½ cup of white or brown sugar ½ cup of vegetable oil and blend or whisk for  Then set aside.
  2. Then add 3 cups of plain flour, 1 tsp cinnamon, salt, baking powder, baking soda, and mix all ingredients in a bowl.
  3. Then combine the dry ingredients into the liquid ingredients and fold together
  4. Add carrot or orange juice if mixture gets to dry. The mixture should be a slightly runny consistency
  5. Then add your peeled and sliced carrots and raisins and mix together
  6. Get a baking tray and butter it up well. Pour mixture into tray at the midway point and put into a pre-heated oven at 180 degrees for 45 mins until golden brown
  7. Take out at let it cool for 20 mins.
  8. Serve with cream cheese icing (optional)
