Mango and Pineapple Crumble.
1 cup of pineapple chunks
1 cups of mango chunks
½ cup of orange juice
½ cup mango juice
½ cup pineapple juice
2 tbsp. corn-starch
1 tsp cinnamon
1tsp nutmeg
1 tsp vanilla
10 digestive biscuits
½ cup of oats
3 cup plain flour
½ cup butter (room temp)
½ cup sugar
Crumble.
Add 3 cups of flour to your bowl and ½ cup butter and mix together to create a crumbly texture.
Then add ½ cup of sugar, 1/2 cup of oats, 10 crushed digestive biscuits and mix all together to create a crumble then set aside.
Puree
On a high heat pan place ½ cup of orange juice, ½ cup mango juice, ½ cup pineapple juice, 2 tbsp. 2tbsp. sugar, corn-starch, 1 tsp cinnamon 1tsp nutmeg, 1 tsp vanilla mix together and bring to a boil.
Use a deep oven pan/pot and place your pineapple and mango chunks inside and mix together.
Then add your puree and pour over the fruits.
Then carefully add your crumble mixture on top making sure it is evenly spread over.
Place in over at 200 degrees for 45mins until crust is golden brown.
