Caribbean and British fusion of flava! we’ve combined two popular easter recipes here. the FLAVA of the Caribbean easter bun and the look of the British hot cross bun! Its taste so good packed full of flavour and easy to make too! have some fun and make this delicious recipe.

  • 115g unsalted butter
  • 50 g  Brown sugar
  • Guava jam 
  • 1 tsp. mixed spice
  • 1 whole nutmeg 
  • Vanilla
  • 1 tbsp. Browning 
  • 284ml Dragon stout 
  • 200 ml whole milk
  • 1 large egg
  • 800g g strong white bread flour, 
  • 1 1/2 tsp. sachet of dried yeast
  • 100 g raisins , or mixed dried fruit soak in rum
  • 3 tablespoons runny honey
  • Icing for cross 

In a saucepan, add Butter, sugar and guava jam then bring to a boil until butter is melted, then add mixed spice, grated nutmeg, vanilla, browning, dragon stout, milk stir and simmer for 5 minutes until smooth then cool down. 

In a large mixing bowl add flour and yeast, then add the butter mixture and egg then mix together and then knead into a dough cover with cloth then proof for 1 hour.

After 1 hour, roll out dough with a sprinkle of flour on the work surface and divide into equal pieces and roll into a smooth ball.

Flatten the dough ball slightly with finger tips, then add soak fruits into the middle and knead into dough over twice adding more fruits and folding over again. Proof again for an hour. Then cook for 25 mins 180 degrees. 

After cooking, glaze the buns with honey and squirt icing in a cross line over the bun, pop back in the oven for 3-5 mins. Rest for 30 minutes before cutting. Serve with cheese sandwiched inbetween the buns and enjoy!
