Jamaican Christmas Black Cake Rum cake / Fruit Cake. This recipe is a ever present during the holiday season in a Jamaican household! This sweet and rum infused cake is what makes Christmas so special. The integral part of this recipe is the soaking of the dried fruit in white rum and red label wine, some people soak for months in one full year! The longer you soak the richer the taste! Another tip is to wrap cling around the cake after it’s finished and rest overnight in room temperature. This allows all the flavours to marinate together.
People from all over the Caribbean Islands have their own twist (and a lot of names!) for Christmas fruit/rum/black cake! This recipe is our interpretation on the Jamaican version. A great dessert dish to share with family and friends and almost guarantees good times during the festive season. Do not serve to children.
- 1 Cup Brown Sugar
- 500g Butter/Margarine
- 12 Eggs
- 450g Plain flour
- 2 tsp Baking powder
- 1 tsp Nutmeg
- 1 tsp Cinnamon
- 1tsp salt
- 1 tsp all spice
- 1000g Mixed dried fruits soaked in white rum and red wine
- 1 tsp vanilla
- 1 tsp lemon juice
- 1/2 cup browning
optional: cracker crumb
- Mix together 1 cup of brown sugar and 500g of butter/margarine (Preferably hand mixer) until you get a creamy fluffy consistency
- Then Add 12 eggs (one by one) mixing each time you put one egg in until you get a runny consistency
- In a separate bowl add 450g plain flour
- 2 tsp baking powder
- 1 tsp nutmeg
- 1tsp allspice
- 1tso cinnamon
- 1tsp salt
- Combine all these ingredients together and civ half of it into the liquid ingredients and mix and fold. together
- Add half of the mixed fruits soaked in rum and mix well until smooth.
- Add the rest of dry ingredients and mix.
- Then add 1 tsp lemon juice.
- 1tsp vanilla
- 1 shot of white rum
- ½ cup of browning
- Add remainder of mixed fruits and Mix together with mixer until smooth.
- Grease your baking tin with butter.
- Then pour mixture into baking tin halfway and shake.
- Pre heat your oven to 350f /180 degrees and put the cake in 1.5 hours.
- Check the cake with a toothpick to know when ready (if the toothpick comes out clean it is ready)
- Pure more rum on the cake for a glaze and garnish with Christmas decorations.
