Growing up we loved minced pies, especially Shaun! He used to sneak some for himself when mum wasn’t looking. We added our own likkle spin by using rum mixed fruit technique used in Caribbean rum cakes for the filling and OMDS! Incredible!

Full recipe

300g plain flour
75g unsalted butter, chilled & cubed
75g lard, well chilled and cut into small cubes
3 tbsp cold water

100g mincemeat soaked in rum
Caster sugar for dusting
1 medium egg yolk

Maldon salt for sprinkling

Method

Add flour into a large mixing bowl. Add the lard and butter and  rub into the flour until crumbly.

Sprinkle the cold water into the crumble mixture, then knead until a dough starts to form then place in fridge for 30 minutes

Cut out 12 large pastry circles using a larger cutter for the base and smaller for the top.

Using a teaspoon, fill up with mincemeat, brushing them with a little cold water. Gently press the small discs, damp side down.

Whisk an egg to make a glaze. Brush this glaze on the top of each mince pie

Prick the lids with a fork to allow the steam

Then Place into a preheated oven for 15-20 minutes or until golden brown.

Sprinkle some castor sugar and Maldon salt to taste. Then cool down.
