Jamaican Cornmeal Pudding brings back so much memories of when we were younger, the sweet smelling aroma of the cornmeal, raisins and mixed spices put a big smile on our faces. Traditionally called cornmeal pone (cornmeal pudding) is a delicious Jamaican dessert made from cornmeal, vanilla  coconut milk, raisins, and  mixed spices.  Cornmeal pudding is a staple dessert in Jamaica and throughout the Caribbean.
Ingredients
  • 250ml coconut milk
  • 1. tsp. Vanilla essense
  • 4 tbsp. Sugar
  • 225g fine cornmeal
  • 175g flour
  • 1/2 tsp grated nutmeg
  • 1/2 tsp mixed spice
  • 1 tbsp. Melted butter
  • 150g raisins
For soft top
50ml whole milk
1/2 tsp mixed spice
1 tbsp. Sugar
Rum cream
125ml double cream
1 shot white rum (optional)
Method
1.In a large mixing bowl add coconut milk, vanilla, sugar then mix together.
Sieve in the cornmeal and flour, add grated nutmeg and mix spices fold, mix then whisky until smooth.
2.Add melted butter, raisins then mix together and pour into a grease proof baking tray.
To make soft top
1.Combine, whole milk, mixed spice and sugar then whisk until smooth then pour the mixture on the top of the pudding until equal.
2.Bake in oven at 180 degrees for 1 hour.
3.Take out of oven then cool for 10 minutes and slice into equal pieces.
To make rum cream
1.Add double cream to s small bowl, a shot of rum then whisk! Its that easy!
