A caribbean cocktail favourite, smooth, sweet & creamy! So simple to make too! Serves 2-4

1 small pineapple or 350g frozen pineapple
Handful of ice
60ml White rum
400ml cream of coconut or coconut milk
150ml Pineapple juice
1 lime juice squeezed
Granulated sugar to taste
Pineapple wedge & Cherry for garnish

In a blender, add ice, rum, pineapple pieces, coconut milk, pineapple juice and squeeze of lime and blend till smooth like a pikney batamm. Add sugar to taste.

Pour into a glass, garnish with pineapple wedge and cherry
