One of our favourite takeaways to get, the Chinese sweet and sour chicken! This recipe  honestly tastes better than our favourite Chinese spot! We’ve added our favourite Caribbean spices to it to give it that extra FLAVA! With this recipe you won’t need to go back to order this dish again!

600g (4 pieces) boneless chicken breast
1tsp Salt
1tsp White pepper (or black pepper is cool)
1tsp all purpose seasoning (for chicken)
1tsp garlic powder
100g flour
4 tbsp of corn starch
1 tsp baking powder
1 tbsp vegetable oil
1 tsp all purpose seasoning (for flour mix)
1 red bell pepper
1 green bell pepper
1 white onion
Tinned pineapple chunks
3 tbsp tomato paste or ketchup
Water
4 tbsp brown sugar
1 tbsp White vinegar
1 tsp Salt

Chop your chicken breast into chunks, place in a mixing bowl and season with salt, white pepper, all purpose seasoning and garlic and mix together.

Put plain flour into a bowl, add corn starch and water and mix together (add some tbsp of oil into this too) and the seasoned chicken and all purpose seasoning and mix together.

Deep fry in vegetable oil for 6-7 minutes and moving around whilst cooking. Rest on a paper towel to remove. In a large frying pan, add oil and tomato puree, then add water, sugar, vinegar and mixture together till thick. Add bell peppers, onions and pineapple chunks and mix together for a couple minutes.

Turn the fire off. Add the fried chicken bites in and combine together. Serve with some fried rice and enjoy!
