Jerk- Suya Chicken! The Afro Caribbean fusion – combining African and Caribbean Flava’s.
Spicy Smokey fragrant and aromatic chicken- Absolutely delicious!
Jerk marinade
- 1 medium onion
- 6 garlic cloves
- 6 fresh thyme sprigs
- 2 spring onions
- 1 scotch bonnet pepper
- 5 pimento seeds
- 25ml white vinegar
- 1 tbsp. Brown sugar
- 1 tsp. browning
- Juice of 1/2 lime
- 125ml water
Suya seasoning spice
1/2 cup unsalted peanuts
1 tbsp. Cayenne pepper /chilli powder
1 tbsp. Garlic powder
1 tsp. Sea salt
1. tsp. Turmeric
1 tsp. Mixed spice
1 tsp. Ginger
4/6 Chicken leg quarters
Gravy
- Juices from chicken
- 150ml Jerk BBQ Sauce
- 1 tbsp. Suya spice seasoning
- 1 tbsp. Chicken stock granules.
- 125ml water
- Spring onions and chillies garnish
- Blend Jerk marinade ingredients together in a blender for 10 seconds then set aside.
- For Suya spice combine ingredients and mix together.
- Wash chicken with lime and vinegar, then add Suya spice and Jerk marinade then massage all over chicken.
- Place chicken in an oven tray with baking paper, then cook for 1 hour at 180 degrees.
- Once Chicken is cooked start on the gravy buy adding the chicken juices from the often tray to a saucepan, then add Jerk bbq sauce, suya spice, chicken stock and water, then whisk until smooth on a medium heat then reduce heat and simmer.
- Pour gravy over chicken then garnish with chillies and spring onions. Serve with Jolly quinoa and salad.
