Cajun Fish w/ Roasted vegetables 

 

  • 1kg Fish fillets (Cod or white fish)

Marinade 

  • 1 tsp. sea salt
  • 1 tsp. black pepper
  • 1 tbsp. garlic powder
  • 1 tsp. paprika 
  • 1 tbsp. Cajun seasoning. 
  • 2 tbsp. olive oil
  • 1 tbsp. Melted butter 

 

Vegetables 

  • 150g Cherry tomatoes 
  • 2 Mixed bell peppers 
  • 1 Courgettes sliced 
  • Red onion chopped 
  • 1 Scotch bonnet 

Dressing 

  •  1tbsp. Lemon pepper seasoning
  • 25ml White wine vinegar 
  • 2 tbsp.  butter. 
  • 2 tbsp. Marinade 
  • Minced garlic 
  • 2 tbsp. Olive oil
  • 50ml Lemon juice 
  • 4 tbsp. Full fat yogurt 
  • Salt and pepper to taste.

 

 

  1. Firstly, make your marinade by combining the above ingredients. Save 2 tbsp. of marinade then massage on to fish and marinade in the fridge for 10 minutes. 
  2. Start prepping your vegetables then add to a mixing bowl, then add some marinade and mix.
  3. Add your vegetables onto a large baking tray and cook for 10 minutes at 200 degrees. Then add your our seasoned fish and cook for further 30 minutes. 
  4. Make your dressing by adding juice from the pan to a mixing bowl, also adding vinegar, melted butter, minced garlic, lemon juice, yogurt, olive oil salt and pepper to taste then mix until smooth.
  5. Once fish and vegetables are cooked cook down then drizzle dressing on top and add fresh parsley.
