Cajun Fish w/ Roasted vegetables
- 1kg Fish fillets (Cod or white fish)
Marinade
- 1 tsp. sea salt
- 1 tsp. black pepper
- 1 tbsp. garlic powder
- 1 tsp. paprika
- 1 tbsp. Cajun seasoning.
- 2 tbsp. olive oil
- 1 tbsp. Melted butter
Vegetables
- 150g Cherry tomatoes
- 2 Mixed bell peppers
- 1 Courgettes sliced
- Red onion chopped
- 1 Scotch bonnet
Dressing
- 1tbsp. Lemon pepper seasoning
- 25ml White wine vinegar
- 2 tbsp. butter.
- 2 tbsp. Marinade
- Minced garlic
- 2 tbsp. Olive oil
- 50ml Lemon juice
- 4 tbsp. Full fat yogurt
- Salt and pepper to taste.
- Firstly, make your marinade by combining the above ingredients. Save 2 tbsp. of marinade then massage on to fish and marinade in the fridge for 10 minutes.
- Start prepping your vegetables then add to a mixing bowl, then add some marinade and mix.
- Add your vegetables onto a large baking tray and cook for 10 minutes at 200 degrees. Then add your our seasoned fish and cook for further 30 minutes.
- Make your dressing by adding juice from the pan to a mixing bowl, also adding vinegar, melted butter, minced garlic, lemon juice, yogurt, olive oil salt and pepper to taste then mix until smooth.
- Once fish and vegetables are cooked cook down then drizzle dressing on top and add fresh parsley.
