Chicken chow mein with FLAVA! The best chow mien you will ever taste. Mixing Chinese and Caribbean flavours for a recipe that will never have you ordering a Chinese takeaway ever again.

  • 1kg Skinless boneless chicken thighs (Thinly sliced in 5cm pieces)
  • 1 tsp. Sea salt
  • 1 tsp. Black pepper
  • 1 tbsp. Soy sauce 
  • 1 tbsp. Baking powder 
  • 1 tbsp. All purpose seasoning 
  • 1 tbsp. Jerk paste 
  • 1 tbsp. Jerk bbq sauce 

Sauce

  • 1 tbsp. Oyster sauce
  • 1 tbsp. Dark soy sauce 
  • 1 tsp. Rice vinegar 
  • 1 tsp.  Brown sugar 
  • 1 tsp. Scotch bonner pepper sauce 
  • 1 tbsp. Jerk bbq sauce 
  • 1 tsp. Sesame oil. 

Vegetables

  • 1/3 White cabbage shredded 
  • 5 Spring onions (diced & tailed) 
  • 2 carrots peeled and sliced 
  • 4 garlic cloves sliced or minced 
  • 1/4 scotch bonnet sliced 
  • 100g Beansprouts 
  • 300g fresh or dried egg noodles (read instructions)

 

  1. Firstly thinly cut your chicken pieces then add to a bowl and season with Salt, pepper, soy sauce, baking powder, all purpose, Jerk paste, jerk bbq sauce,  then Mix together and marinate for a few hours. 
  2. For the sauce, add the ingredients above and mix util smooth. 
  3. In a large wok add sesame oil on a medium heat and add chicken pieces and cook through until browned, then remove and set aside.
  4. Then add all your vegetable and cook down until soft then remove. 
  5. Add your egg noodles to the to wok and cook for 30 seconds then add in cooked chicken and stir well. Now add in your sauce and mix well followed by the vegetable and incorporate everything together on a high simmer.
