Steamed fish with crackers is a traditional Jamaican dish. As an island nation, Jamaican cuisine have a variey of pescatarian option, but this recipe is the peoples favourite. The is a spicy dish with plenty of flavour with a variety herbs and seasonings, The fish stock is delicious and complements this dish.
- 3 Red snapper fish
- 1tbsp. Black pepper
- 1tbsp All-purpose seasoning
- 1tbsp. Fish seasoning
- 1/2 cup sliced mixed peppers
- 1/2 cup Onion
- 3 cloves garlic
- 1/2 cup Tomatoes
- 1 chopped scotch bonnet pepper
- 4/5 Branches of fresh thyme
- 2 fish tea stock
- 1 cup of water
- 1/2 cup of sliced carrots
- 1/2 cup okra
- 1/2 cup potatoes
- 1 tbsp. butter
- 1/2 cup spring onions
- Firstly wash and clean snapper fish with lime and water. (Ask butcher to clean and remove insides)
- Then Score your fish with a sharp knife
- Season fish with Black pepper, All-purpose seasoning, and fish seaoning massage all over fish
- Then add Fresh thyme, and spring onions inside the fish then set aside.
- Put your frying pan on high heat and add 1/4 cup of fish stock
- Then add 1/4Sweet peppers,1/4 Onions, garlic,frehs thyme, 1/4 carrots, 1/4 potatoes. 1/4 okra, 1 chopped scotch bonnet.1/4 Tomatoes. Add some more Black peppers and 1tbsp of butter.
- Mix and simmer for 5 mins.,
- Then add your snapper fish and pour the rest of your fish stock on top
- Add the remaining vegetables on top of the fish
- cover and cook for 20 mins on medium heat
- Serve with Crackers, bammy, hardough bread.
