- 10 Baby potatoes halved.
- 4 Salmon fillets
- 1 tsp. sea salt
- 1 tsp black pepper
- 1 tbsp. garlic powder
- 1 tbsp. all-purpose seasoning
- 4 tbsp. Olive oil
- Juice of 1 lemon
- 450G Coconut yogurt
- 2tbsp. garlic paste.
- 1 tsp. all-purpose seasoning
- Handful of diced parsley
- 1 sprig of fresh thyme
- Lemon juice.
- 6-8 Broccoli tender stems
- 6-8 Fresh baby tomatoes on vine
- Lemons wedges for garnish.
- Start off by halving your baby potatoes, then boiling your them until tender. Season with salt, garlic, and thyme. Then set aside.
- For the salmon, drizzle olive oil then season with all-purpose, garlic powder, and black pepper then set aside.
- In a large oven tray place your salmon in the centre around all your veggies, drizzle on olive oil and lemon juice then cook in oven for 25 mins at 180 degrees.
- In the meantime, add coconut yogurt to a frying pan, with garlic powder and spices bring to a boil stir well then add parsley and thyme to create this creamy, coconut garlic spiced sauce
