Welcome to everyday flava – bringing FLAVA to your everyday meals.  Episode two – Coconut Garlic & herb Salmon tray bake. A delicious easy and heathy recipe to get you through the week. Perfect for meal preps and family meals

  • 10 Baby potatoes halved.
  • 4 Salmon fillets
  • 1 tsp. sea salt
  • 1 tsp black pepper
  • 1 tbsp. garlic powder
  • 1 tbsp. all-purpose seasoning
  • 4 tbsp. Olive oil
  • Juice of 1 lemon
  • 450G Coconut yogurt
  • 2tbsp. garlic paste.
  • 1 tsp. all-purpose seasoning
  • Handful of diced parsley
  • 1 sprig of fresh thyme
  • Lemon juice.
  • 6-8 Broccoli tender stems
  • 6-8 Fresh baby tomatoes on vine
  • Lemons wedges for garnish.
  1. Start off by halving your baby potatoes, then boiling your them until tender. Season with salt, garlic, and thyme. Then set aside.
  2. For the salmon, drizzle olive oil then season with all-purpose, garlic powder, and black pepper then set aside.
  3. In a large oven tray place your salmon in the centre around all your veggies, drizzle on olive oil and lemon juice then cook in oven for 25 mins at 180 degrees.
  4. In the meantime, add coconut yogurt to a frying pan, with garlic powder and spices bring to a boil stir well then add parsley and thyme to create this creamy, coconut garlic spiced sauce
