We provide a superior product that will evoke a new appreciation for infusing “traditional” Bahamian spices in a “non-traditional” way.

  • 300g Lamb steaks
  • 1 tsp coarse black pepper
  • Thumb of ginger minced 
  • 2 garlic cloves minced 
  • 300g Firehouse Pepper jelly 
  • Parsley 
  • 250ml water 
  • Fresh thyme for basting
  • 1 scotch bonnet (optional)

Season lamb chops with salt black pepper, ginger, and garlic. Then marinate for up to two hours.

In the mean time make the glaze by using a saucepan on a medium heat, add Pepper jelly and some water then cool down for 2-3 mins then simmer to create a delicious glaze.

In a frying pan add olive oil on a medium heat and add lamb chops and cook for 5-7 mins on each side (Add a whole scotch bonnet pepper for extra spice!). Now add glaze and stir in and bask for 2-3 mins with some fresh thyme, then cool down then garnish with parsley

Serve with mash and and greens.
