Ingredients

For the Fried Dumplings:

  • 3 cups self-raising flour

  • ¼ tsp salt

  • 1 tbsp butter

  • 2 tbsp brown sugar

  • ⅓ cup whole milk

  • 1 cup cold water (add gradually)

  • Cooking oil (for shallow or deep frying)

For the Mackerel:

  • 2 tins of mackerel (in brine, oil, or tomato sauce)

  • 1 medium onion, sliced into strips

  • 4 garlic cloves, minced

  • ½ green bell pepper, sliced

  • ½ red bell pepper, sliced

  • ¼ Scotch bonnet pepper, sliced (optional for heat)

  • A handful of tomatoes, halved or diced

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp all-purpose seasoning

  • Salt & black pepper to taste

To Serve:

  • Sliced avocado

  • Fried plantain


Method

To make the fried dumplings:
In a large bowl, mix the flour, salt, and brown sugar. Rub in the butter until the mixture resembles breadcrumbs. Add the milk, then slowly add cold water while mixing until a soft dough forms. Knead lightly, then pinch off small pieces and roll into balls. Heat oil in a deep pan over medium heat and fry the dumplings until golden brown on all sides. Remove and drain on paper towels.

To cook the mackerel:
Heat olive oil in a frying pan over medium heat. Sauté the onion, garlic, bell peppers, and Scotch bonnet until softened. Add chopped tomato, garlic powder, and seasoning, and cook briefly. Add the drained tinned mackerel and stir gently to combine. Season with salt and pepper, and cook until heated through. Serve with the fried dumplings.


 Serve

Plate up the fried dumplings with the spicy mackerel mix. Add slices of avocado and fried plantain on the side for the ultimate Caribbean comfort meal!
