Episode 3 – Honey Garlic Chicken and rice .An Easy everyday recipe that will save you time so you can focus on the most important thingsLife can get busy.. when you’ve come home from a long day at work or after the school run you want to cook something thats easy and convenient that doesn’t compromise on flava. And this recipe will do just that.
- 600g Boneless Thighs
- 1 ts salt
- 1 tsp black pepper
- 1 tbsp. Garlic powder
- 1 tsp garlic paste
- 1 tsp paprika
- 1 tsp all purpose
- 1 tbsp. Honey
- Drizzle of olive oil
- 1 onion diced
- 4 garlic cloves
- 2 spring onions diced
- 1/2 red and green bell pepper diced
- 250g basmati rice
- 500ml chicken stock
- Spring onion ends
- 4 sprigs of thyme
- 1 scotch bonnet
- Gravy
- 2 tbsp spoons of marinade
- Juices from chicken
- 250ml bbq sauce
- 250 chicken stock
- Make your marinade by mixing together salt, black pepper, garlic powder and paste, paprika, all-purpose honey and olive oilThen massage onto the chicken. (Save 2 tbsp. Of marinade for the gravy)
- In a frying pan add in some oil on a medium high heat then brown and cook the chicken for 5 mins on each side until golden.
- Place chicken into a bowl and set aside. Remember to keep the juices of chicken for the gravy!
- In the same pan add a little oil then cook down your veggies until translucent and season to taste, add in washed rice and mix in then pour in chicken stock and water and mix together until liquid level is a few inches above the rice. Place in your spring onions, fresh thyme and scotch bonnet for fragrance and flavour. Then add your chicken on top then cook on a low-medium heat for 25 minutes.
- For the gravy add some of the marinade into a small saucepan on a medium heat, with some of leftover chicken juices, add some bbq sauce, chicken stock and water then whisky until smooth.
