Brown stew chicken- Deeply flavorful and packed full of goodness. Jamaican Brown Stew Chicken is one of those feel good foods that’s so versatile. I would easily eat this would rice and peas or white rice. Even mash.
- 1kg Skinless chicken thighs
- 1 tsp sea salt
- 1 tsp. Coarse black pepper
- 1 tbsp. All purpose seasoning
- 1 tsp pimento
- 1 tsp. Paprika
- 1 tsp. Browning
- 1 small onion sliced
- 1/2 Red bell pepper sliced
- 2 garlic cloves/ minced
- 6 fresh thyme sprigs
- 1/2 scotch bonnet sliced
- 1 spring onion sliced
- 2 tbsp. Cooking oil
- 1 tbsp. Brown sugar
- 500ml water
- 1 tbsp. Stock granules
- Firstly Remove skin from chicken thighs and Wash with lime & vinegar.
- Add chicken to a bowl then season with salt, pepper, all purpose, pimento, paprika and browning then marinate in fridge overnight.
- Add cooking oil to a pan on a high heat then add some sugar then caramelise for a few minutes.
- Add seasoned chicken and brown on each side for 10 minutes to get some colour.
- Add remaining vegetables in the pan, along with water and stock granules then stir well to create a brown stew gravy.
- Cover and cook on a medium – high heat for 35 minutes. Make sure you stir pan every 10 minutes and add additional water if required.
