Honey Roast Leg of Lamb
- 1 Large Leg of Lamb
- 1 Tbsp. Salt
- 1 Tbsp. Pepper
- 1 Tbsp. All-purpose seasoning
- 1 Tbsp. Paprika
- 1 cup Honey
- 6 Sprigs fresh thyme
- 6 Garlic cloves
- 1 scotch bonnet pepper
- 1 cup Olive oil
- 2 chopped onions
- 4 Chopped carrots
- 1 cup mixed peppers
- 1 cup of Baby Potatoes
- 1 cup Broth
- 1 tbsp. Flour
- 1 tbsp. Butter
Firstly Wash Lamb with Lime and water and dry.
Then Poke holes all over the lamb
- Add 1 tbsp. of olive oil to the lamb and rub all over.
- Then add Salt, Pepper, All purpose, paprika and rub all over lamb.
- Add the garlic cloves inside the holes of the lamb, along with the fresh thyme and spring onions.
- Then add honey on top of the lamb
- Set the lamb aside.
- Add 2 chopped onions, 4 Chopped carrots, 1 cup mixed peppers, 1 cup of Baby Potatoes to a baking tray and drizzle oil, honey and black pepper on top.
- Then add your leg of lamb on top of vegetables.
- Place lamb in a in a pre-heated oven at 160 degrees for 1hr 30 mins.
- Take out of the oven and set lamb aside to cool.
- Then place baking tray on stove and add 1 cup of broth, 1 tbsp. flour or corn-starch and mix until you form gravy.
- Cut your lamb and serve with vegetables and gravy
- Will serve a family of 4-5
