  • 3kg Leg of Lamb 
  • Jerk mint marinade 
  • 1 Onions
  • 4 garlic cloves 
  • 1 scotch bonnet, 
  • Handful of fresh thyme, 
  • 8 pimento seeds
  • 1 tsp salt, 
  • 1 tbsp. sugar, 
  • 50 vinegar, 
  • 250ml water, 
  • 1 tsp browning, 
  • Handful fresh mint. 
  • 1 tbsp. Black pepper
  • 1 tbsp. Garlic 
  • 1 tbsp. All purpose 
  • 1 tbsp. Paprika 
  • 2 tbsp honey 
  • 2 tbsp. Stock granules 
  • 150ml Jerk bbq sauce 


  1. Make your marinade by blending onions, garlic, spring onions, fresh thyme, pimento seeds, scotch bonnet. Sugar, vinegar, browning water and mint. Then Set aside
  2. Wash lamb with lime and vinegar
  3. Score lamb and Season with salt , pepper, all purpose, garlic, paprika ,honey, then pour the jerk mint marinade on the lamb.
  4. Wrap lamb in baking paper, in an oven tray the. Cover with foil. Add water to the oven tray with 1 tbsp. Of the marinade mixed in. 
  5. Cook for 2.5 hours at  200 degrees. The. Rest and slice.
  6. For Gravy , mix lamb juices together with jerk bbq sauce, stock granules and  salt then Whisk.
