  • 8-12lb Turkey
  • 1 tbsp. Extra virgin olive oil
  • 2 tbsp. unsalted butter
  • 2 tbsp. sea salt
  • 3 tbsp. paprika
  • 3 tbsp. Mixed herbs
  • 1 medium onion
  • 1 whole scotch bonnet
  • 2 spring onions
  • 340g Super blend Jerk seasoning paste
  • To make gravy
  • 2 tbsp. Super blend Jerk paste or Turkey juices from oven tray
  • 2 tbsp. BBQ sauce 250ml water
  • 1 tbsp. Gravy granules
